Pancetta is prepared with pork belly, that is salted and rolled into a cylinder and cured for 30 days. The Pancetta is meant to be enjoyed uncooked, so to not detract from the luscious, melt-in-your-mouth texture and its subtle sweetness. It can also sliced into thin rounds or cut into cubes to be sautéed till crisp to add a welcome fatty, savouriness to simple and complex recipes.
